Drowned egg in a soup of bread, spicy gorgonzola and Serrano ham

Ingredients for 4 people

  • Extra virgin olive oil
  • One onion
  • One leg of celery
  • One carrot
  • A jug of water
  • Salt and black pepper
  • Stale bread
  • Glass of white wine vinegar
  • 100 g of spicy gorgonzola
  • 4 fresh eggs
  • 200 g of Serrano ham


In a pan, put extra virgin olive oil, chopped onion, celery and carrot.¬†Brown well. Cut the bread into cubes. Add the bread into the brown. Bathe with water. A pinch of salt. A grating of black pepper. Bake for about 30 minutes, turning occasionally. When the cooking is ultimate, whisk everything well. Prepare the veil of spicy gorgonzola putting a thin slice between two sheets of plastic wrap. Well flatten with a rolling pin. Let’s compacting into water and ice. Prepare the drowned egg. Bring the water to a boil with a pinch of salt and a little glass of white wine vinegar. Break the egg into a small bowl. Put it gently into boiling water. Cook it from two to three minutes. Place it on a cotton cloth to remove the excess water. Put into the plate. On the bottom of the plate, put the cream of bread. Lay the egg. Cut a veil of gorgonzola with the help of a mold and put it on the egg. Garnish with Serrano ham slices.
