Pan seared salmon with Gorgonzola

Ingredients

  • 50 g (1 3/4 oz) of strong Gorgonzola
  • 4 salmon fillets
  • 1 tsp of salt
  • black pepper as required
  • 2 tsp of cane sugar
  • 1 tbs of olive oil
  • 2 chopped cloves of garlic
  • ½ lemon
  • parsley
  • 10 g (1/3 oz) of honey
Preparation

Pour a tablespoon of oil into a pan big enough to contain the 4 salmon fi llets. Season the salmon fi llets on both sides with salt, pepper and cane sugar. Cook each side of fillet for 2 minutes, reducing heat after the first minute. Add garlic and the lemon slices to the salmon fi llets, cover with a lid and sauté it for 1 minute. Open the lid, switch the heat off and crumble Gorgonzola on the upper side of the fi llets, cover again to make the cheese a little bit softener. Sprinkle the salmon with parsley and season it with a few honey.
