- 8 x 100g Welsh Lamb chops
- 2 tbsp olive oil
- salt and cracked black pepper
- ½ red onion, sliced
- 50g fresh breadcrumbs
- 50g Gorgonzola piccante, crumbled
- ½ tbsp chives, chopped
- ½ tbsp parsley, chopped
- 1 tsp lemon zest
Rub chops in oil, salt and pepper.
Fry onion in oil until crispy, add breadcrumbs and fry until golden brown. Leave to cool.
Stir Gorgonzola through breadcrumbs with chives, parsley, lemon zest, salt and black pepper.
Place chops on a baking tray and cook under a hot grill for 2-3 minutes a side. Top each with the Gorgonzola mixture and grill for 3-4 minutes until topping is crisp and golden brown.
