The Gorgonzola DOP cheese is made with no added additives or preservatives.

The pasteurization of the milk used in the cheese-making process, the implementation of rigorously-controlled health and safety procedures and operating production practices and the correct development of the fermentation process activated by the lactic acid bacteria are sufficient to guarantee the safety of the cheese and the integrity of its physical and organoleptic characteristics.
