  • 1 sprig of thyme
  • 1/2 garlic clove
  • Breadcrumbs q.s.
  • 1 egg
  • 500 g cooked chickpeas
  • 4 hamburger rolls
  • 1 large red onion

Start preparing the Chickpea burgers. Use a blender to whisk the drained chickpeas with garlic, 2 tablespoons of evo oil, thyme, 2 tablespoons of breadcrumbs, the egg, a pinch of salt and ground black pepper, until the mixture is compact and smooth.
Shape into burgers using a mould, bread them and brown in a non-stick pan with evo oil for about 7 minutes per side.
Take the rolls, cut them in half and compose the hamburger with the salad, the chickpea burger, caramelised onions and crumbled SPICY GORGONZOLA
