Savoury baci di dama (lady’s kisses) filled with cheese and spicy gorgonzola cream

How can you resist such a kiss? The savoury mix embraces the cheese cream and Gorgonzola gives the missing spicy touch.
Give many “baci” (kisses) to your most glutton friends.



  • 80 g grated parmesan cheese
  • 100 g flour
  • 100 g almond flour
  • 90 g cold butter
  • a pinch of salt
  • 2 tablespoons of milk


  • 80 g spreadable cheese
  • 100 g spicy gorgonzola
  • 2 tablespoons of fresh cream
  • 1 sprig of rosemary
  • Black pepper

Put the milk, diced cold butter, parmesan, flours and the pinch of salt in a blender.
Blend until you obtain crumbs. Transfer the mixture to a cutting board and knead it to make a ball. Shape balls of the size of a walnut and put them on a baking tray covered with greaseproof paper and slightly press them. Preheat the oven to 180° and then cook for 20 minutes.
Remove and leave to cool.
Meanwhile prepare the filling. In a bowl add the spreadable cheese, chopped rosemary, crumbled spicy gorgonzola, cream and
black pepper. Work the mixture using electric whisks until the cream is smooth.
Pour it in a pastry bag and start filling the baci di dama two by two and place them on a plate.
