Wrap piadina with spicy Gorgonzola sauce, mortadella, ground pistachios, raw onion and semi-dried tomatoes
120 g mortadella
Shelled pistachios q.s.
1 Tropea onion
2 tablespoons of semi-dried tomatoes
FOR THE GORGONZOLA SAUCE
100 g spicy gorgonzola
2 tablespoons of fresh cream
1 pinch of cayenne pepper powder
For the gorgonzola sauce, melt the crumbled gorgonzola in a non-stick pan with the cream and a pinch of cayenne pepper powder. Once the sauce is smooth, pour it in a sauceboat and leave to cool.
Start preparing the piadina wrap. Warm the piadina up slightly and then put it on a cutting board. Place the rocket, mortadella slices, thinly sliced raw onion, ground pistachios and drizzle the gorgonzola sauce on top. Roll it and tie it with a twine. Serve immediately.
