High quality is the goal of a journey that begins with the choice of milk, the undisputed raw material, and continues through the details of each individual process. The milk, in fact, comes only from selected cowsheds. In the production phase, moreover, the most advanced technologies are alternated with steps deliberately still carried out by hand, and special care is devoted to the seasoning and ripening phase of the cheeses.
Today Caseificio Defendi, in its ultra-modern plant in Caravaggio, has the ability to process up to 150,000 liters of milk per day into PDO and high-quality cheeses, produced with the pride of those who do not forget ancient traditions, just as its founder would have wanted.
