Apple and speck pie with Gorgonzola PDO


  1. Cut 60 g bacon into slices and then strip them not too thinly. Slice 1 apple and transfer to a bowl. Drizzle with a little lemon juice and keep it aside. In a bowl, pour the cream and add 2 eggs, salt and pepper. Mix well.
  2. Place 1 roll of brisée pastry on a previously oiled baking dish and arrange the apple slices on the bottom. Pour the egg mixture and bacon over the apples. Add Gorgonzola Pdo and season with salt and pepper. Brush the edges of the brisée pastry with 1 beaten egg.
  3. Bake in a preheated oven at 180° for 1 hour.
  4. Let the cake cool and garnish it with chives.
