Arabic bread stuffed with Gorgonzola PDO, herb hummus, dried tomatoes and mushrooms


  • 200 g Gorgonzola PDO
  • 4 arabic rolls
  • 50 g dried tomatoes
  • 150 g champignon mushrooms

For hummus:

  • 430 g cooked chickpeas
  • 2 tablespoons of lemon
  • 4 tablespoons of evo oil
  • 1/2 garlic clove
  • 1 teaspoon of salt
  • 5 tablespoons of tahini
  • Aromatic herbs


  1. Start by preparing the hummus.
  2. In a blender add all the ingredients and mix until the mixture is smooth.
  3. If the mixture is too compact, add a little water.
  4. In a bowl add the sliced mushrooms, the dried tomatoes and season with evo oil, salt and pepper.
  5. Stir well and set aside.
  6. Cut the roll in half, toast it and then stuff it with a layer of herb hummus, mushroom and dried tomatoes salad and finally the Gorgonzola PDO.
  7. Close it and serve immediately.
