Asparagus and spicy Gorgonzola Pdo sponge cake

Ingredients

  • 150 g spicy Gorgonzola Pdo
  • 6 eggs
  • 400 g Flour
  • 100ml seed oil
  • 200 ml milk
  • 1 sachet of baking powder for pies
  • 14 asparagus
  • Basil
  • Black pepper

Preparation

  1. Start by boiling 3 eggs for 8/10 min and then peel them after letting them cool in cold water.
  2. Clean the asparagus by removing the end tips and then blanch them for 10 minutes.
  3. Let them cool and then keep 7 aside.
  4. Cut the remaining asparagus into rounds that are not too small.
  5. In a bowl, beat 3 eggs with the seed oil. Add the milk, salt and flour a little at a time.
  6. Add the yeast, asparagus, diced spicy Gorgonzola Pdo, basil and pepper. Mix well until the mixture is smooth.
  7. Pour half the batter into an oiled and floured sponge cake mold, then place the 3 hard-boiled eggs and top with more batter.
  8. Garnish with the remaining asparagus, more cubes of spicy Gorgonzola Pdo, and a pinch of pepper. Bake in a static oven at 190° for 45 minutes.
