Baked peppers stuffed with bread and Gorgonzola Pdo

Ingredients for 4 people

  • 150 g Gorgonzola Pdo
  • 3 peppers
  • 200 g bread from the day before
  • 20 g pine nuts
  • 20 g olives
  • 1 egg
  • 20 g capers
  • 1 sprig of mint
  • milk to taste
  • evo oil
  • salt
  • pepper

Preparation

  1. Cut the bread coarsely and soak it in milk. Squeeze it, then transfer it to a bowl. Add the egg, olives, capers, Gorgonzola Pdo, pine nuts, mint and season with salt and pepper.
  2. Stir until smooth.
  3. Cut the peppers in half and remove the seeds and inner filaments.
  4. Fill the peppers with the bread mixture and arrange them on an oiled baking sheet.
  5. Add a drizzle of oil and bake in a preheated oven at 180° for 30 minutes.
