Bread and tomato soup with spicy Gorgonzola PDO e basil

Ingredients

  • 500 g ripe tomatoes
  • 300 g stale bread
  • 1 l vegetable stock
  • 1 red onion
  • Evo oil
  • Salt
  • Pepper
  • 200 g spicy Gorgonzola PDO
  • Basil

Preparation

  1. Wash the tomatoes, peel and cut coarsely.
  2. Heat 1 tablespoon of evo oil in a saucepan withthe chopped onion, brown a couple of minutes, then add the tomatoes.
  3. Season with salt and pepper and cookover medium heat.
  4. In a bowl, put the diced bread and cover withhot stock.
  5. Once the crust is soft, add the bread in the panwith tomatoes.
  6. Season with salt and pepper, and add freshbasil.
  7. Cook until the bread is completely mushy.
  8. Serve the soup lukewarm, garnish withspicy Gorgonzola PDO, fresh basil and a drizzle of evo oil.
