Cabbage, apple, citronette, spicy Gorgonzola PDO and walnut salad


  • ½ cabbage
  • 2 red apples
  • 50 g lemon juice
  • 70 g evo oil
  • salt
  • pepper
  • 200 g spicy gorgonzola PDO
  • Ground walnuts


  1. Start preparing the citronette.
  2. In a bowl, pour the lemon juice, salt and pepper.
  3. Start whisking and slowly add the evo oil, until the mixture is slightly dense.
  4. Trim the cabbage and the apples and cut into thin strips.
  5. Transfer to a bowl and drizzle with the citronette.
  6. Cut the gorgonzola in cubes and transfer to the bowl.
  7. Add ground walnuts, stir well and serve the cabbage salad.
