Carpaccio of wagyu beef, cream of sweet gorgonzola and sakura shrimps


  • 100 g Wagyu Beef
  • 1 leg celery
  • Black pepper
  • Extra virgin olive oil
  • Soy sauce
  • 100 g Gorgonzola PDO (sweet)
  • 1 glass cooking cream
  • Green sprouts
  • 20 g Sakura shrimps


  1. Prepare the meat by removing the excess of fat. Slice it finely.
  2. Cut the celery into julienne strips.
  3. Season with pepper, extra virgin olive oil and soy sauce.
  4. Flatten the slices of meat.
  5. Lay the celery.
  6. Roll the meat.
  7. Prepare the emulsion with sweet gorgonzola, cooking cream, soy sauce, extra virgin olive oil and black pepper.
  8. Whisk everything well.
  9. Now put into the plate.
  10. On the bottom, place the emulsion of gorgonzola and the rolls of raw meat.
  11. Decorate with green sprouts.
  12. Complete with soy sauce, a piece of sweet gorgonzola, Sakura shrimps and a drizzle of extra virgin olive oil.
