Chickpea hamburger with salad, crumbled spicy Gorgonzola PDO and caramelised red onions

Ingredients

  • 4 hamburger rolls

  • 150 g Gorgonzola PDO (spicy)
  • 30 g butter
  • 1 red onion (large)
  • Salad
  • 2 teaspoons cane sugar
  • Salt

Per i burger di ceci

  • 500 g chickpeas (cooked)
  • Breadcrumbs
  • 1 egg
  • 1/2 clove garlic
  • 1 sprig thyme
  • Evo oil
  • Salt
  • Black pepper

Preparation

  1. Start by preparing the caramelised onions.
  2. Wash the onion and slice thinly.
  3. In a non-stick pan melt the butter, add the onions, salt to taste and simmer for 10 minutes until they turn translucent.
  4. Add the cane sugar and cook the onions until caramelised.
  5. Remove from heat and set aside.
  6. Start preparing the Chickpea burgers.
  7. Use a blender to whisk the drained chickpeas with garlic, 2 tablespoons of evo oil, thyme, 2 tablespoons of breadcrumbs, the egg, a pinch of salt and ground black pepper, until the mixture is compact and smooth.
  8. Shape into burgers using a mould, bread them and brown in a non-stick pan with evo oil for about 7 minutes per side.
  9. Take the rolls, cut them in half and compose the hamburger with the salad, the chickpea burger, caramelised onions and crumbled SPICY GORGONZOLA
