Cream with minestrone, spicy Gorgonzola PDO, nuts, seeds and fresh herbs

  • 60 g Spicy Gorgonzola PDO
  • 600 g mixed minestrone
  • 100 ml fresh cream
  • Dried chilli pepper
  • Mixed nuts
  • Pumpkin seeds
  • Aromatic herbs
  • Evo oil
  • Salt
  • Pepper


  1. Pour the minestrone into a saucepan and heat it over mild heat.
  2. Turn off the heat and add a pinch of chilli pepper, a pinch of salt and the cream.
  3. Blend the minestrone with the aid of a blender until the cream is smooth.
  4. In a non-stick pan, toast the nuts and pumpkin seeds until they have browned.
  5. Set aside.
  6. Cut the Spicy Gorgonzola PDO in dice and set aside for the garnish.
  7. Serve the cream of minestrone garnished with Spicy Gorgonzola PDO, the roasted nuts and seeds, fresh herbs and a drizzle of evo oil.
