Fennel cream with Spicy Gorgonzola PDO and crispy apple

Ingredients

  • 200 g Spicy Gorgonzola PDO
  • 800 g boiled fennel
  • 300 g boiled potatoes
  • 1 onion
  • 1 L vegetable stock
  • fennel
  • apple chips to taste
  • evo oil
  • salt
  • pepper

Preparation

  1. Brown the chopped onion in a saucepan with a tablespoon of evo olive, add the diced vegetables and season with salt and pepper.
  2. Add the boiling broth and stir well.
  3. Blend the mixture and season with salt and pepper.
  4. Serve the soup with the apple chips, diced Spicy Gorgonzola PDO, fennel and a pinch of black pepper.
