Fillet steak with sweet Gorgonzola PDO sauce and aromatic herbs


  • 200 g Gorgonzola PDO (sweet)
  • 4 fillet steaks
  • 30 g 00 flour
  • 30 g butter
  • 250 ml milk (full-fat)
  • Evo oil
  • marjoram (fresh)
  • Maldon salt
  • Black pepper


  1. Start preparing the gorgonzola sauce.
  2. Melt the butter in a small pot over low heat, add the sieved flour and the full-fat milk. Stir quickly with a whisk until the mixture becomes dense.
  3. Add SWEET GORGONZOLA cut in small pieces and let it melt.
  4. Season with black pepper and stir properly.
  5. Pour the sauce in a sauceboat.
  6. Heat a pan with a drizzle of evo oil.
  7. Cook the meat 1 minute per side.
  8. Serve on a plate, add a pinch of Maldon salt, marjoram and drizzle the gorgonzola sauce on top.
