Goblets of creamed pinzimonio with brisée crackers and spicy Gorgonzola PDO

Preparation

  1. Start by preparing the crackers. Roll out a roll of brisée dough on a baking tray and cut out strips with the help of a pizza wheel. Brush with EVO oil and garnish with sesame, fresh thyme and salt. Bake in a preheated oven at 180° for 20 minutes.
  2. Meanwhile, prepare the cream. Coarsely chop the raw vegetables and pour them into a blender. Add the yoghurt, EVO oil, salt, pepper, basil and mint. Blend everything.
  3. Serve the cream in small single-portion glasses accompanied by the crackers garnished with Spicy Gorgonzola Pdo, fresh herbs and a grinding of black pepper.
