60 g grated parmesan cheese + 1 pinch for the gratin

Preparation
Cook the pasta in abundant salted water according to the packet instructions. Drain and season with a drizzle of olive oil and set aside.
Meanwhile prepare the cheese sauce. In a saucepan melt the butter, add the flour and let it toast while stirring. Add gradually the warm milk and bring to the boil.
Add the pieces of SWEET GORGONZOLA, parmesan, fresh thyme and season with salt and pepper.
Add the sauce to the pasta, stir well and put it in a buttered oven pan.
Flatten out, sprinkle some parmesan, more thyme and leave 20 minutes in the oven at 200°. Take out and let rest 10 minutes before serving.
