- Start by preparing the crackers. In a bowl, combine 150 g whole-wheat flour with the sunflower, linseed, sesame and pumpkin seed mix, thyme, 50 g oatmeal and a pinch of salt. Mix and then add 130 ml water and 50 ml evo oil.
- Knead until you have a well-mixed mixture.
- Spread it between two sheets of parchment paper with the help of a rolling pin until it is a few millimeters thick. Remove the paper and use a pastry cutter to cut out squares or rectangles without separating them from each other.
- Add a drizzle of evo oil and a pinch of salt and bake in a preheated oven at 180° for 20 minutes. Allow to cool and then separate the crackers.
- In the meantime, cut 1 pink grapefruit into wedges and dice 120 g of spicy Gorgonzola PDO.
- In a frying pan, blanch 12 prawns with a little evo oil. Season with salt and pepper.
- Transfer the salad to a serving dish; add all the ingredients and dress. Serve it with crackers.
