Clean the mushrooms and onion and cut them into slices that are not too thin. In a nonstick skillet, heat a little oil with a clove of garlic. Add the mushrooms and cook them over high heat for 10 minutes. Season with salt and pepper. Oil the pizza pan, and roll out the dough to the edges. Add the tomato puree, cooked mushrooms, and raw red onion. Add a drizzle of evo oil and the basil. Bake in a preheated oven at 230° for 20 minutes, then add the spicy Gorgonzola Pdo and fresh basil.
