Wash the pears, peel and cut them in small cubes. Set aside. Stretch out the puff pastry on a baking tray and cut out rectangles. Punch with a fork the centre of the pies and spread SWEET GORGONZOLA, pear cubes, ground walnuts over them and season with salt and pepper. Brush the pie edges with beaten egg, preheat the oven to 180° and then cook for 20 minutes.
Take out, garnish with fresh lemon thyme and serve immediately.
