Roasted vegetables with spicy Gorgonzola PDO crumble

Ingredients

  • 1 Yellow Cauliflower
  • 1 Green Cauliflower
  • 1 White Cauliflower
  • 15 New Potatoes
  • 250 g Spicy Gorgonzola PDO
  • Extra Virgin Olive Oil
  • Salt
  • Black Pepper
  • Thyme

Preparation

  1. Wash the vegetables, cut the cauliflowers into florets and peel the potatoes.
  2. Blanch the vegetables in abundant salted water for about 10 minutes.
  3. Drain and place on an oiled baking tray.
  4. Season the vegetables with a drizzle of evo oil, salt and pepper.
  5. Preheat the oven to 200° and then cook until the vegetables are golden.
  6. Serve lukewarm with the crumbled spicy Gorgonzola PDO and fresh thyme.
