Savory cheesecake by the glass with Gorgonzola Pdo

Ingredients

  • 200 g Gorgonzola Pdo
  • 150 g saltine crackers
  • 70 g arugula
  • 50 g butter
  • 250 g spreadable cheese
  • 3 gelatin sheets
  • 100 ml fresh cream
  • 100 g smoked salmon
  • 3 radishes
  • pepper

Preparation

  1. In a blender, pulverize the crackers with the arugula and then transfer them to a bowl. Add the melted butter and mix. Transfer the mixture to the base of the glasses and press with the back of a spoon.
  2. Let cool 30 min in the refrigerator.
  3. Meanwhile, soften the gelatin in water. In a small saucepan, heat the cream and then melt the gelatin inside.
  4. Mix the Gorgonzola Pdo with the spreadable cheese and then combine the cream with the gelatin. Mix well and add salt and pepper to taste.
  5. Divide the mixture among the glasses and level. Chill in the refrigerator for 2 hours and then garnish with the salmon, radishes, a few arugula leaves and pepper.
