DIFFICULTY

Skewers with salmon cubes, thinly sliced courgettes and Gorgonzola PDO sauce

Ingredients

  • 150 g Gorgonzola PDO
  • 30 ml Milk
  • Pepper
  • 2 Long courgettes
  • 400 g Salmon in a fillet
  • Dill
  • Breadcrumbs
  • Evo oil
  • Maldon salt

Preparation

  1. Wash the courgettes and slice thinly lengthwise.
  2. Blanch them in boiling water for a few seconds and set aside.
  3. Cut the salmon fillet in cubes and bread it with breadcrumbs, dill, salt and pepper.
  4. Take a metal skewer and alternate the courgette slices with the salmon cubes.
  5. Transfer the skewers onto a baking tray covered with baking paper.
  6. Add a drizzle of evo oil and bake in a preheated oven to 180° for 10/15 minutes.
  7. Meanwhile prepare the sauce.
  8. Melt the Gorgonzola PDO with the milk in a saucepan over low heat.
  9. Whisk quickly until the mixture becomes dense.
  10. Season with pepper and stir well.
  11. Set aside.
  12. Serve the hot salmon skewers with the Gorgonzola PDO sauce.
