Toast with avocado, hummus, spicy Gorgonzola PDO e pink pepper

Ingredients

  • 4 big slices of toast bread
  • 2 avocados
  • 150 g spicy Gorgonzola PDO
  • 30 g butter
  • Pink pepper

 

For hummus:

  • 220 g cooked chickpeas
  • 1 tablespoon lemon juice
  • 2 tablespoons evo oil
  • 1/2 small garlic clove
  • 1 pinch of salt
  • 2 tablespoons tahini

Preparation

  1. Start preparing the hummus for the toast.
  2. In a mixer, add cooked chickpeas, lemon juice, evo oil, garlic, salt and tahina.
  3. Start mixing and, if needed, add little water to make the hummus soft.
  4. In a non-stick pan, melt the butter, add the bread slices once at a time and toast them on both sides.
  5. Put a slice of bread on a serving plate, spread the hummus on the base, put the avocado slices and crumble the spicy Gorgonzola PDO on top.
  6. Pour a dash of evo oil and season with salt and pink pepper.
  7. Cover with another toasted slice of bread and cut it in half.
