Toasted brioche bread with Gorgonzola, taggiasca olives, aubergine, semi-dried tomatoes and basil

Ingredients for 4 people

  • 4 slices of brioche bread
  • 200 g SWEET GORGONZOLA
  • 70 g taggiasca olives
  • 1 long aubergine
  • 70 g semi-dried tomatoes
  • Fresh basil
  • Evo oil
  • Salt
  • Black pepper

Preparation

  1. Slightly grease the slices of brioche bread with oil using a brush and brown them in a non-stick pan.
  2. Wash the aubergine and cut it in cubes. Pour 4 tablespoons of evo oil in a non-stick pan, heat and add the aubergines and cook over medium heat.
  3. Add the semi-dried tomatoes, taggiasca olives and season with salt and pepper. Cook for about 15 minutes.
  4. Place the toasted slices of brioche bread on a serving plate, spread a spoonful of aubergines, a few SWEET GORGONZOLA flakes, and garnish with fresh basil.
