Vegetable omelet with Gorgonzola PDO

Preparation

  1. Peel 1 small red onion, slice it thinly and keep it aside.
  2. In a bowl, beat 6 eggs, add parsley and marjoram and season with salt and pepper. Add 500 g cooked vegetables (pumpkin, mushrooms and broccoli) and continue stirring.
  3. Pour the mixture into a previously oiled oven dish and garnish with the onion slices, 10 semi-dried cherry tomatoes and 120g of Gorgonzola Pdo.
  4. Bake in a preheated oven at 180° for 20 minutes.
  5. Serve warm.
