Codfish with Gorgonzola PDO and tomatoes

Ingredients

  • 200 g Gorgonzola PDO (mild)
  • 300 g codfish fillets
  • 1 tbs flour
  • 5 tbs extra virgin olive oil
  • 2 tomatoes (ripe)
  • oregano (dry)
  • salt
  • pepper

Preparation

  1. First of all prepare the codfish: put salt and pepper to taste and fl our it.
  2. Pour the oil into a pan and when it is very hot, sauté the codfish for 2 minutes on each side.
  3. Spread the codfish fillets with mild Gorgonzola, cover the pan with a lid and wait for the cheese being melted down.
  4. In the meantime heat a pan with little oil and cook the sliced tomatoes for another minute on each side.
  5. When the time is up, sprinkle them with crumbled oregano. Serve very hot.
