Crispy panzanella with spicy Gorgonzola PDO and brown bread

Ingredients

  • 400 g coloured cherry tomatoes
  • ½ loaf stale brown bread
  • 200 g spicy Gorgonzola PDO
  • 3 tablespoons white wine vinegar
  • to taste: sweet and sour onions
  • to taste: basil evo oil
  • to taste: salt pepper

Preparation

  1. Cut the bread into cubes and place them on a baking tray.
  2. Drizzle with a little extra virgin olive oil and brown in the oven at 200°C for 10 minutes. Peel the coloured cherry tomatoes and cut them in half.
  3. Cut the spicy Gorgonzola PDO into cubes. Transfer the croutons, cherry tomatoes, sweet and sour onions and spicy Gorgonzola PDO into a bowl.
  4. Dress the panzanella with vinegar, extra-virgin olive oil, salt and pepper.
  5. Stir thoroughly and leave to rest for 30 minutes.
  6. Garnish with fresh basil and serve.
