Gorgonzola PDO Mousse with Crunchy Caramelised Nuts and Red Fruits

Ingredients

  • 300 g Gorgonzola PDO
  • 150 g mascarpone
  • 1 teaspoon honey
  • 100 g raspberries
  • 100 g currants
  • 50 g walnut kernels
  • 5 tablespoons caster sugar

Preparation

  1. Start with making the nut brittle.
  2. Melt the sugar in a non-stick pan, once it has reached an amber colour, add the walnuts.
  3. Stir well until all the walnuts are covered and transfer the mixture onto a sheet of baking paper.
  4. Once cooled, coarsely chop it with a knife.
  5. In a bowl, work the Gorgonzola PDO with mascarpone cheese and honey with a whisk until the mixture is smooth.
  6. Transfer the mixture in a glass with low edges and garnish with caramelised nuts and red fruits.
