The best way to store and cook Gorgonzola PDO

After you buy the cheese, it is recommended to remove the rind and wrap it in a foil or put it in a container to prevent its aroma from dispersing in the fridge.

Before cooking it and to maximise the unique characteristics of Gorgonzola PDO, remove from the fridge and leave out for at least 30 minutes to bring to room temperature before tasting it.

Gorgonzola PDO prefers wines with a certain softness and sapidity.  White wines like Riesling, Pinot Blanc, Orvieto Classico, Frascati Sup., Malvasia dry, Gavi. Rosé wines like Chiaretto del Garda, Lagrein Kretzer. The most suitable red wines are Valtellina superiore, Sassella, Dolcetto (any area), Chianti Classico, Teroldego, Merlot del Triveneto, Sangiovese di Romagna.
