Chickpea omelet with chicory and spicy Gorgonzola Pdo

Preparation

  1. Peel 1 bunch of chicory and roughly chop it. In a frying pan, lightly fry 1 clove of garlic with a little oil, 2 anchovies in oil and the chili pepper. Add the chicory and cook for 15 minutes. Season with salt and pepper and set aside.
  2. Pour 200 g chickpea flour and a pinch of salt into a bowl. Stir with a whisk, adding 500 ml water at a trickle. Add 2 tablespoons of EVO oil and a pinch of salt and continue stirring until smooth.
  3. Add the chicory to the chickpea flour mixture; add pepper to taste and mix.
  4. Pour the mixture into an oiled baking tin and add the diced spicy Gorgonzola Pdo.
  5. Bake in a preheated oven at 200° for 30 minutes.
  6. Serve it warm, garnishing it with a few cubes of spicy Gorgonzola Pdo accompanying it with a fresh salad.
