COD CROQUETTES WITH GORGONZOLA PDO SAUCE

Ingredients

  • 150 g Gorgonzola Pdo
  • 500 g cod from the day before
  • 100 ml fresh cream
  • 2 eggs
  • 1 lemon with edible peel
  • Breadcrumbs
  • 100 g crumb
  • Parsley
  • Salt
  • Pepper
  • Frying oil

Preparation

  1. Begin by preparing the Gorgonzola Pdo sauce.
  2. In a small saucepan, heat the cream and then add the Gorgonzola Pdo. Melt it over low heat and then add the chopped parsley, pepper and lemon zest. Keep aside.
  3. In a blender, combine the cod, crumbs, eggs, parsley, salt, and pepper. Blend until smooth.
  4. Shape the meatballs with your hands and dip them in breadcrumbs.
  5. Fry them in plenty of oil until golden brown.
  6. Add a pinch of salt and serve them with the Gorgonzola Pdo sauce.
