Coloured tomatoes salad with herb oil, spicy Gorgonzola and bread croutons


  • 8 slices of stale bread
  • 300 g mixed tomatoes
  • Evo oil
  • Mixed aromatic herbs
  • 200 g spicy Gorgonzola
  • Salt
  • Black pepper


  1. Wash the tomatoes and cut in wedges.
  2. Put them in a bowl and set aside.
  3. Cut the bread in cubes, transfer to a baking tray, add a drizzle of evo oil and bake at 200 °C until golden.
  4. Meanwhile prepare the herb oil. In a blender glass add the aromatic herbs, 2 coffee cups of evo oil, salt and pepper.
  5. Blend until the oil becomes bright green.
  6. Cut the spicy gorgonzola in cubes and add to the tomatoes.
  7. Add the croutons in the bowl, season with herb oil. Serve immediately.
