Fava beans and potato puree with sweet Gorgonzola PDO, bacon and herbs


  • 800 g leftover puree
  • 300 g fava beans
  • 150 g sweet gorgonzola
  • 100 g bacon
  • 1 white onion
  • 1 glass milk
  • Fresh herbs
  • Evo oil
  • Salt
  • Pepper


  1. Put 2 tablespoons of evo oil in a saucepan and brown the onion.
  2. Add the fava beans and cook over medium heat until tender.
  3. Season with salt and pepper.
  4. In the meanwhile, brown the bacon without oil in a non-stick pan over high heat until golden.
  5. Keep some fava beans for garnish.
  6. Add the leftover puree to the fava beans in the pan together with a glass of milk. Stir well and blend with a stick blender.
  7. Transfer the potato and fava beans puree to a serving plate and garnish with sweet gorgonzola flakes, bacon, fava beans and fresh herbs.
