Gorgonzola PDO Salad

Ingredients for 4 people

Dressing

  • 4 tbsp aged Traditional Balsamic Vinegar of Modena P.D.O
  • 1 clove Garlic (crushed)
  • 6 tbsp Extra virgin olive oil
  • Salt
  • Black pepper

Salad

  • 300 g Mixed tomatoes (sliced)
  • 1 handful Watercress rocket
  • 1 handful Spinach leaves
  • ½ Red onion (sliced)
  • 30 g Pistachio nuts (chopped)
  • 125 g Spicy Gorgonzola PDO (crumbled)

Preparation

  1. Whisk together dressing ingredients and season to taste.
  2. Arrange tomatoes, salad leaves, red onion and pistachios on serving plates and dress with vinaigrette.
