Potato salad with Gorgonzola PDO

Ingredients for 4 people

  • 800 g yellow potatoes
  • 200 g Gorgonzola PDO
  • 2 tablespoons vinegar
  • 5 tablespoons evo oil
  • 1 tablespoon mustard
  • ½ litre vegetable stock
  • to taste: chives salt pepper

Preparation

  1. Peel the potatoes. Boil them and then cut them into large chunks.
  2. Mix the extra-virgin olive oil, vinegar, 1 tablespoon mustard, salt and pepper in a small bowl. Stir thoroughly.
  3. Pour the dressing over the potatoes together with 3 tablespoons of stock and mix together well.
  4. Gradually add the stock while continuing to stir.
  5. Finally add the Gorgonzola PDO and the chives.
