Roast pumpkin with spicy Gorgonzola PDO

Ingredients

  • 800 g roast delica pumpkin
  • 200 g spicy Gorgonzola PDO
  • ½ pomegranate
  • to taste: baby spinach hazelnuts

 

for the sauce:

  • 3 tablespoons tahini
  • 125 g greek yogurt
  • 1 and a ½ tablespoons lemon juice
  • ½ clove garlic
  • to taste: salt pepper

Preparation

  1. Separate the pomegranate seeds and chop the hazelnuts.
  2. Prepare the sauce: mix the tahini, lemon juice, garlic and 2 tablespoons of water together in a bowl.
  3. Add the yogurt and add salt and pepper to taste.
  4. Transfer the slices of pumpkin to a plate and dress with the baby spinach leaves, cubed spicy Gorgonzola PDO, pomegranate seeds, chopped hazelnuts and sauce.
