Shot glasses with Gorgonzola Pdo mousse

Ingredients

  • 200 g Gorgonzola Pdo
  • 150 g cow’s ricotta
  • 50 ml fresh cream
  • 1 sprig of mint
  • 100 g berries (raspberries, blueberries and blackberries)

 

  • For the crumble:
  • 80 g cold butter
  • 80 g brown sugar
  • 80 g 00 flour
  • 20 g almonds
  • 20 g hazelnuts

Preparation

  1. Start by preparing the crumble. Coarsely chop the dried fruit and set aside. In a bowl, combine the flour and butter and quickly knead the ingredients until crumbs form. Add the dried fruit and mix. Let cool in the refrigerator for 30 min.
  2. Arrange the crumble on a baking sheet and then bake in a preheated oven at 200° for 10 min. Let cool and then crumble it.
  3. For the mousse, combine the ricotta, mint, Gorgonzola Pdo and fresh cream in a bowl. Work the mixture with an electric whisk until smooth.
  4. Transfer the mixture to shot glasses and garnish with the crumble, berries and mint.
