Spaghettone with Gorgonzola Pdo sauce and salmon tartare

Ingredients

  • 150 g Gorgonzola Dop
  • 320 g Spaghettoni
  • 200 g fillet of downed raw salmon
  • 1 untreated lemon
  • herbs (dill and chives)
  • 100 ml fresh cream
  • evo oil
  • salt
  • pepper

Preparation

 

  1. Begin by preparing the Gorgonzola Pdo sauce.
  2. In a small saucepan, heat the cream and then add the Gorgonzola Pdo. Melt it over low heat and then add the chopped herbs and pepper. Keep aside.
  3. Then proceed to prepare the salmon tartare.
  4. Remove the skin from the salmon and then dice it. Transfer it to a bowl and season with a drizzle of evo oil, salt, pepper and lemon zest.
  5. Cook the pasta in plenty of salted water and drain when al dente. Then toss it in the pan with the Gorgonzola Pdo sauce.
  6. Plate the pasta and lay the salmon tartare on top.
