Tuna tartare with Gorgonzola Pdo sauce

Ingredients

  • 100 g Gorgonzola Pdo
  • 400 g downed raw tuna
  • 50 ml fresh cream
  • 20 g pistachio granules qb
  • 1 untreated lime
  • evo oil
  • salt
  • pepper
  • 1 sprig of marjoram

Preparation

  1. Begin by preparing the Gorgonzola Pdo sauce.
  2. In a small saucepan, heat the cream and then add the Gorgonzola Pdo. Melt it over low heat and then add pepper. Keep aside.
  3. Proceed with the tuna tartare. Dice it and transfer it to a bowl. Season it with a drizzle of evo oil, salt, pepper and the zest of the lime.
  4. Plate the tartare with the help of a pastry cup, garnish with the Gorgonzola Pdo sauce, pistachio granules, marjoram and a lime wedge.
