In order to benefit from this denomination, the cheese must comply with the conformity requirements set out in the relevant product specification that all producers must respect. Authorised by the Italian State and under its supervision, the Consortium for the protection of Gorgonzola DOP cheese was created in 1970. Its officials ensure that the laws in force in Italy and in all the countries of the world where the designation of origin “Gorgonzola” is protected are fully respected and applied.
