To make the Gorgonzola Pdo cream, combine the spreadable cheese, Gorgonzola Pdo, creme fraiche, herbs, and a pinch of salt and pepper in a bowl. Process the mixture until smooth.
Spread the cheese cream on the bagel base. Lay the salmon slices and onion, and garnish with fresh herbs and a grating of fresh lemon and black pepper. Fold back and serve.
