Carrot Cake with Gorgonzola PDO

Ingredients

  • 250 g plain flour
  • 220 g sugar
  • 400 g cooked carrots
  • 80 ml seed oil
  • 3 eggs
  • 1 orange
  • 1 sachet baking powder
  • 150 g Gorgonzola PDO
  • to taste sugar flowers
  • to taste mint

Preparation

  1. Blend the carrots in a blender and set to one side. Use an electric whisk to beat the eggs with the sugar in a bowl.
  2. Add the oil, carrots and orange zest. Add the sieved flour and baking powder and mix thoroughly.
  3. Transfer the mixture into an oiled and floured 26 cm cake tin and bake in a preheated oven at 170°C for 40 minutes.
  4. When cooked, leave to cool completely. Using a pastry cutter, cut out discs.
  5. Place a layer of Gorgonzola PDO on half of the discs and close with the other disc. Garnish with more Gorgonzola PDO, mint and sugar flowers.
