Martin Pear to Port and Sweet Gorgonzola PDO with Crumbs of Cocoa Pastry Dough

Ingredients

  • 4 pears Martin Sec
  • 1 glass Port wine
  • 100 g butter
  • 100 g sugar
  • leaves Mint
  • 100 g rumbs of cocoa pastry dough
  • 100 g Gorgonzola PDO (sweet)
  • Powdered sugar

Preparation

  1. Prepare a caramel with butter and sugar.
  2. Peel the pears removing the core.
  3. Cook the pears in the caramel for several minutes with the mint leaves and the Port wine.
  4. Let’s cook the pears covered, to keep them soft.
  5. Turn the pears occasionally to make them take a nice color.
  6. When the cooking is ultimate, remove them from heat.
  7. Polish the pears with part of the cooking liquid.
  8. Put the pear in the platter and place around the crumbs of cocoa pastry dough.
  9. Cut a slice of sweet gorgonzola and melt it in the caramel of Port remained.
  10. Glaze the pear with caramel of Port and sweet gorgonzola.
  11. Complete the plate with mint leaves and powdered sugar.
