Chickpea Pancakes garnished with Gorgonzola PDO, Mint and Lime


  • 200 g Gorgonzola PDO
  • 400 g Boiled chickpeas
  • 150 g Flour
  • 1 Shallot
  • 2 Eggs
  • 175 ml Water
  • Evo oil
  • Salt
  • Pepper
  • Mint
  • 1 Lime


  1. Start by preparing the pancake dough.
  2. In a mixer, mix the chickpeas with the flour, shallot and eggs and start blending.
  3. Add the water a little at a time and then add salt, pepper and a drizzle of evo oil.
  4. Blend until the mixture is smooth.
  5. Heat a non-stick frying pan slightly greased with oil and pour a spoonful of the mixture cooking it as if it were a pancake.
  6. Continue until the mixture is finished.
  7. Serve the chickpea pancakes garnished with Gorgonzola PDO, a slice of lime, fresh mint and a pinch of pepper.
