Eggplant rolls with Gorgonzola PDO

Ingredients for 4 people

  • 12 slices of grilled eggplant from the day before
  • 100 g spreadable cheese
  • 200 g Gorgonzola Pdo
  • 1 lemon
  • 60 g dried fruit
  • Mint
  • Chives
  • 2 tablespoons of Tahini
  • 1 tablespoon of Evo oil
  • Salt
  • Pepper

Preparation

  1. Coarsely chop the dried fruit and set aside In a bowl, combine the spreadable cheese, Gorgonzola Pdo, dried fruit, mint, chives, grated lemon zest, a drizzle of Evo oil, salt, and pepper. Mix well and set aside.
  2. In a bowl, prepare the sauce by mixing 2 tablespoons tahini, Evo oil, and 1 tablespoon lemon juice. Mix well, and add a little water if the sauce is too thick.
  3. Lay eggplant slices on a cutting board and add a layer of stuffing. Close up by making rolls.
  4. Serve garnished with tahini sauce and fresh mint.
